Are sexual ordeals symbolized by the element water or is it fire, just because both of this elements can symbolize the sexual force, one as the sexual fires and the other the sexual fluid?

Do not confuse the sacred fire, the Holy Spirit, with the element of Fire. The sacred fire is a primordial energy which can transform into the four elements (and back). So the alchemical element of Fire is a modification of the Sacred Fire.

When we want to know what elements are active during sexual ordeals, we need to look at Sulfur and Mercury:

“Now, regarding poisonous Sulfur, this resides within the lower animal depths of any living being. Thus, if we do not liminate that poisonous or arsenic Sulfur, we do not progress... Arsenic Sulfur is the poisonous animal sexual fire, which everyone carries in their atomic hells, a beastly, unclean, abominable fire. Every human being carries it. In that type of animal fire, there are many living psychic aggregates; their type, we can say, belongs to the world of ninety-six laws or infernal world. How do we eliminate that poisonous or arsenic Sulfur? Well, this is eliminated by working in a pure and clean manner eliminating the same dry Mercury; likewise, the poison Sulfur is eliminated. When we go through the ordelas of Fire or Water, it is something else:
Fire: the student faces the "fire" of criticism and must respond with love, patience, equanimity, etc. "The candidate is exposed to this ordeal in order to examine his serenity and sweetness. The wrathful and choleric inevitably fail this ordeal. The candidate experiences being persecuted, insulted, wronged etc."

Water: tests the disciple’s altruism and philanthropy. "The candidate is thrown into the ocean and believes himself to be drowning. Those who do not know how to adapt themselves to the various social conditions of life, those who do not know how to live among the poor, those who after being shipwrecked in the ocean of life reject the struggle and prefer to die, they, the weak ones, inevitably fail in the ordeal of water."

The crucial aspects during ordeals though are our ability to self-observe and our ability to direct our three brains. We might notice during an ordeal something along the lines of "I am being ridiculed and attacked, this must be an ordeal of Fire!". But it is completely worthless, if we are not able to exactly sense where our psychological elements are burning and if we are not able to calm the fires down (stay serene) in our centers.
