Can concentrating intensely on an object like a rock with eyes open, help strengthen concentration skills when meditatating with eyes closed?

Yes, but it is better to concentrate on an object and then to close your eyes for visualization, since this exercise involves both concentration and imagination, which are essential for entering into meditation.
