There are a couple of reasons. The dream symbol guide was provided by a student of the Master and was not written directly by himself. It was removed because it was not authored by Samael Aun Weor and because it contained mistakes. While many of the symbols are accurate, there are some that are not. Also, a dream symbol guide generally creates dependency on, "I had a dream! What did the book say?" when the important thing to do is to take that experience into meditation, without any preconceptions or filters for the mind, so as to extract the deep, profound and personal meaning associated with the conscious dream.

Does this help?

Joyful in hope, suffering in tribulation, be thou constant in thy prayer.

Benedictis, qui venit in nomine Domini. Osanna in excelsis.

"Blessed is he who comes in the name of the Lord. Hosanna in the highest!"

Dream Yoga is a collection of writings that we created (ten years ago? :o) in order to aid students and instructors. When the first edition of the book was assembled it seemed that the dream symbols would be a useful addition. They were written by a student of Samael Aun Weor and had long been distributed in Spanish, even with many people believing Samael had written them. After the Dream Yoga book sold out, we re-examined everything in it, adding new chapters and expanding it, and also accepting guidance from our instructors regarding that section of dream symbols. It was advised to remove it, primarily because of lazy students who only want superficial answers and do not analyze their own experiences, or study Kabbalah, or meditate, all of which lead to correct interpretation of dreams. We also removed it because it was adding to the misunderstanding about who wrote those meanings. We feel that the updated edition is a much stronger book now.
