Let us analyze that in context.

Now as touching things offered unto idols, we know that we all have γνῶσις gnōsis. γνῶσις gnōsis puffeth up, but charity edifieth. And if any man think that he knoweth any thing, he knoweth nothing yet as he ought to know... However, not everyone has this knowledge (gnōsis | γνῶσις | nom sg fem). But some, because in former times they were involved with [psychological] idols, eat this food [in their minds] as though it were an idol sacrifice, and thus their conscience [soul], being weak, is defiled [with pride].


Thus the meaning is clear: when we think (with our mind) that we have gnosis, we are wrong. that is a form of "idol worship" but the idol is psychological, and an image of oneself: pride.

Yet pure gnosis is very necessary:

Luke 1:77:
to give his people the knowledge (gnōsin | γνῶσιν | acc sg fem) of salvation by the forgiveness of their sins,

Luke 11:52:
Woe to you lawyers! For you have taken away the key of knowledge (gnōseōs | γνώσεως | gen sg fem). You did not enter yourselves, and have hindered those who wanted to enter.”

Romans 2:20:
a corrector of the foolish, a teacher of little children, having in the law the embodiment of knowledge (gnōseōs | γνώσεως | gen sg fem) and of truth —
