Inverential Peace!

While many of the benefits of fasting are already understood, how to go about a fast is still a bit unclear.
My instructor told me that during a fast one must only consume water (which I find logical), but one may also add a tad bit of honey, as it also provides a superior type of sugar (glucose), which we need for our brains to work properly. However, it is inevitable for one to try to find "gray areas" in such instructions, which constitute my question:
During a fast, must one consume ONLY water and nothing else? Namely, are drinks like tea excluded? (seeing how it's essential water)
Also, I make it a point to fast at least 24 hrs out of the week, but I read that fasting too much isn't healthy. Could this possibly be clarified?

There are many different types of fasts, all which are easily researchable and identifiable through using the internet. Many holistic traditions have their specific methods, many of which are beneficial and useful depending on your idiosyncrasies and needs.
